Method A: 0 Points Possible Assignment

Set an Assignment to have 0 points possible.

Do this for a specific "Bonus Task" (like attending a seminar) in a points-based course. 

Ensure "Display Grade as" is set to Points.

It's hard to predit how this affect the overall grade, though.

Method B: Over-Grading

Just add points beyond the stated Points possible.

Canvas will accept any number in the grade cell. 

Adding points beyond the points possible is another simple extra credit method on a specific exam or paper.

Method C: Weighted Assigment Groups

Use weights (e.g., Exams = 50%, Homework = 50%), but create a new group called "Extra Credit."

Set this Assignment Group to 0% initially.

Warning: This can sometimes make grades look strange early in the semester, so most instructors wait until the END of the term to add the weight to an Extra Credit group

Add an assignment to that group with SOME point value.

Later, near the end of the quarter, re-assign that "Extra Credit" group a weight (e.g., 2%).  

So Homework: 50%, Exams: 50%, Extra Credit: 2%, Total: 102%

Method D: "Fudge Points" in Canvas Quizzes.

Used when grading, "Classic Quizzes"

Open a student's quiz in SpeedGrader.

Scroll to the bottom of the page.

Enter a positive number (to add) or negative number (to subtract) in the Fudge Points field.

Click Update Score.

What about "New Quizzes"?

Not recommended unless you have a specific reason to use them when "Classic Quizzes" don't work.

"Fudge Points" are replaced (sorta) by the instructor manually adjusting points and mentioning something in the "Grading Notes" section.
